- Heat a large, deep frying pan over medium to strong heat, pour in the olive oil and potatoes and cook for 4 minutes.
- Next, add the courgettes etc and the sausage and cook for another 5 minutes.
- Turn the heat down to medium and add the grated tomato. Then bring to a boil.
- Whisk the eggs in a large bowl along with the milk, salt, pepper, spearmint and mizythra cheese.
- Pour the mixture of eggs, potatoes, cheese, sausages & vegetables into an ovenproof dish and bake for 10 minutes. Serve the omelette warm.
