Oven-baked omelette


Product: 6-pack of Free Range eggs

  • Vegetables (1 onion, 1 courgette, 1 leek, 1 eggplant, 3 potatoes)
  • 1 medium-sized country-style sausage
  • 3 Grated tomatoes
  • 10 Eggs
  • 140 ml Milk
  • 150 gr Graviera cheese
  • 200 ml Olive Oil
  • Salt/pepper


  1. Heat a large, deep frying pan over medium to strong heat, pour in the olive oil and potatoes and cook for 4 minutes.
  2. Next, add the courgettes etc and the sausage and cook for another 5 minutes.
  3. Turn the heat down to medium and add the grated tomato. Then bring to a boil.
  4. Whisk the eggs in a large bowl along with the milk, salt, pepper, spearmint and mizythra cheese.
  5. Pour the mixture of eggs, potatoes, cheese, sausages & vegetables into an ovenproof dish and bake for 10 minutes. Serve the omelette warm.
